02 — Product quality & laboratory analysis

The oil, measured

Independent analysis of the oil itself at Laboratorio Juan Antonio Tello in Jaén, an ENAC-accredited laboratory recognised by the International Olive Council. The report names the sample it was drawn from, so the figures describe that tested batch rather than a permanent specification for every bottle.

  • Free acidity

    0.21%

Measured as oleic acid. The extra virgin limit is 0.8%.

  • Peroxide value

    5.2meq O₂/kg

A measure of oxidation. The extra virgin limit is 20.

  • Total polyphenols

    393mg/kg

As caffeic acid. These natural compounds carry an oil's bitterness and pungency. No regulatory limit is set.

  • Oleic acid

    74.24%

The main fatty acid in olive oil. The extra virgin range is 55–85%.

Analysed on 28 September 2026 by Laboratorio Juan Antonio Tello S.L.U., Jaén, certificate 60928180012 / M5-I, against the limits for the category Extra Virgin Olive Oil. Sample: 1 L PET bottle, green tamper-evident cap, client reference COMP 19 EXPORT 25-26, received 14 September 2026. The results refer to the sample analysed.

Every parameter reported is inside the extra virgin limits. The multi-residue screen (GC-MS/MS) covered more than 300 pesticides and reported each one below the laboratory's limit of quantification of 0.010 mg/kg. Limits are taken from Implementing Regulation (EU) 2022/2104, CODEX Stan 33-1981 and Regulation (EU) 2023/915. The laboratory marks the ethyl ester and total polyphenol tests as outside its ENAC accreditation scope.

03 — UAE testing & verification

Tested again in the Emirates

Before offering the range here, Nomas submitted a sealed 250 ml bottle to the Food Laboratory Section of Ajman Municipality's Central Laboratories Department. This is a laboratory test report on that sample — local verification, not a certification.

The producer's quality system

Oleícola Álvarez runs its own Quality and Food Safety department, which controls the oil from harvest to sale and audits the suppliers of its packaging, transport and labelling. The company was first certified to IFS and BRC in 2011 and states that it keeps 100% traceability from the olive grove to bottling.

Milling, filtration, blending and bottling all take place at that certified site in Torredonjimeno, and the oil is analysed by an independent laboratory in Jaén: the current certificate of analysis is published on this page.

From grove to bottle

  • Family estates. More than 1,600 hectares in Córdoba, Jaén and Cádiz supply about 90% of the company's production.
  • One site, one process. Extraction, filtration, blending and filling in glass, PET and tin, all within the certified scope above.
  • Traceable packs. Lot and best-before codes are printed on every bottle, tin and portion.
  • Documented on both sides. Laboratory analysis in Spain, and a UAE laboratory test of the 250 ml bottle before the range was offered here.
